If you’re looking for a way to take your store-bought cinnamon rolls to a new level, this is a great recipe that only takes a few extra minutes to prep. This cinnamon roll casserole is a fun twist on a classic that everyone loves. It offers all the delicious flavors of a traditional cinnamon roll in a convenient and shareable dish. Quick and Easy Cinnamon Roll Casserole Recipe

 

I don’t know what it is about holiday brunches, but I really enjoy hosting them. There’s something so special about gathering at home. We were supposed to go out for Easter brunch this year, but my daughter was sick, so I ran out and got a few things for brunch. With 3 little kids, easy is key, so I served a fresh fruit salad, and made an egg dish and this cinnamon roll casserole. It’s such a delicious recipe and I used store-bought cinnamon rolls and prepared icing, so it couldn’t have been easier. This cinnamon roll breakfast casserole has been a favorite breakfast treat at our house for a while now, and it’s an easy recipe that the entire family will love. This is definitely a level-up for cinnamon rolls which makes it perfect for holidays – I made it for Christmas morning breakfast and the whole family loved it. 

You can make your cinnamon rolls from scratch, but I am not in my bake things from scratch era right now. My kids are just too young, and why make things harder or more time-consuming than they need to be? And let’s face it – store-bought cinnamon rolls are delicious. 

 

Why I love this recipe

It’s so easy to make! And I like easy. 

My kids only like the soft, gooey inside, and this recipe means every piece is perfectly gooey and baked. Bake it over the holiday season or as a fun weekend breakfast.

I’ve seen other renditions of this recipe that use heavy cream, but wanted to make it a little healthier, so I tried using vanilla almond milk and it was just as good. I also add syrup which makes it a little sweeter. 

Everyone will love this recipe, but if you have any left over, store it in an airtight container in the fridge. It’s just as delicious the next morning.

 

What you need

Casserole dish or large skillet. 

 

Ingredients

  • 2 cans of refrigerated cinnamon rolls with cream cheese icing. I like Annie’s Organic and Immaculate Baking Co. You can use Pillsbury, and it would probably be better, but I really like these two brands. 
  • 3 large eggs 
  • 1/2 cup vanilla almond milk or whole milk if preferred. I used Califia almond milk. 
  • 1 tbsp. melted butter
  • 2 teaspoons vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup maple syrup. 1/4 cup to add to the mixture and 1/4 cup to drizzle over the top of the finished dish. I use Kirkland’s organic from Costco.

 

 

How to make my cinnamon roll casserole

  1. Preheat your oven to 350 and butter or use non-stick cooking spray to lightly cover your casserole dish. 
  2. Cut your cinnamon roll dough into small pieces. Place the cinnamon roll pieces in your buttered or oiled casserole dish. You can use kitchen shears, a pizza cutter, or knife. Put cream cheese icing to the side – you won’t use it until the casserole is done baking. 
  3. Mix eggs, almond milk, vanilla, cinnamon, nutmeg, and syrup in a medium bowl. 
  4. Melt butter and add it to the egg mixture.
  5. Pour the egg mixture over the top of the cinnamon rolls.
  6. Once your oven is preheated, bake for approximately 30 minutes, until the top of the casserole is golden brown. 
  7. Remove your baking dish from the oven and melt your icing for 15-20 seconds. Pour the warm icing over the top of the casserole and drizzle 1/4 cup of maple syrup if you want it to be extra sweet. I was scrambling with 1 sick child and a baby under 1 (the 5 year old was coloring and making my life especially easy) so I actually did not add the extra syrup over the top of the casserole and it was delicious. 
  8. Let the casserole cool and enjoy.
